In Perugia it is possible to taste foods of the gastronomic Umbria tradition, changing of course depending from the place of origin. Some of these have been connected for a long time to the agricultural production cycle or religious or familiar festivities, or to the Carnival, Ferragosto (15th of August, a holiday in Italy) or simply to the “Sunday lunch”.
An objective criterion to classify all this is of course missing; therefore here is proposed a choice among the most important dishes of the regional tradition. It has also been considered the easy commercial availability of these products in local shops and the possibility of finding them in taverns and little restaurants centred in local specialities.
