Ciaramicola

Typical Easter ring shaped cake, the Ciaramicola is, within our city’s tradition, a symbol representing  - in the little hills of its shape – the five historic neighbourhoods of  Porta Sole, Porta Sant’Angelo, Porta Susanna, Porta Eburnea e Porta S. Pietro and the Fontana Maggiore at its centre.

It is a reddish coloured cake with a white icing and coloured sugar on top. It is a spring cake and, according to tradition, it was given by the young girls as present to their affianced groom on Easter day.

Persons: 4

Ingredients:
400 gr flour, 3 eggs, 100 gr butter or lard, 300 gr sugar, half lemon peel, a little glass of alkermes, baking powder.

Preparation:
Mix flour, eggs, sugar and all other ingredients; place in a buttered cake pan shaping it like a ring. Preheated oven medium temperature (180°C) for about 40 minutes. Ice the top of the cake, when almost cooked, with the egg whites beaten firm. Decorate with coloured sugar.
